Jump right in and make two kinds of traditional Japanese sweets. Start with the traditional nerikiri, which has a delicate sweetness that dissolves in the mouth. Each one is made to delight the eyes and taste buds with seasonal shapes. This means many different types get made all year. Basically always made by hand, nerikiri are also the sweets used in the lovely tea ceremony, with the exquisite creations being pieces of "edible art".

Then learn to make taiyaki, a common sight at festivals and a much loved treat. They start with a sweet batter, like pancakes, and then get stuffed with sweet bean paste or a range of other fillings. Of course, no cooking lesson is complete without a tasting, so get ready to eat up.
