    Born in Tokyo in 1994, Tatsunari discovered a passion for Japanese knives during a Kyoto trip. After leaving an IT job, he trained in Sakai and now offers workshops to showcase Japanese knives' sharpness and quality, mainly to international visitors.
  3. 【Types of Knives】
    1. Deba Knife:For filleting fish; thick and heavy, good for bones.
    2. Santoku Knife: Ideal for meat, fish, and vegetables; very convenient for home cooking.
    3. Yanagiba Knife: Used for slicing sashimi and sushi; features a long, thin blade for smooth cuts and clean edges.
  4. Notes and Explanation
    craftsman will discuss important points for the experience and the history of Japanese knives.
  5. Sharpening Experience
    Start with a practice knife, then sharpen the knife you purchased.
  6. Handle Attachment
    Attach a handle to the sharpened knife by heating the tang, fitting the handle, and securing it with a mallet.
  7. Packaging
    The knife is packaged and handed to you.

Authentic knife-smithing experience

Takato Matsudaira was instructive, protective, and kind as he taught us about the knife-making process. It gave us a renewed appreciation for the knives that we use every day. At the end of this class, we produced wobbly, pitted knives that we'll treasure forever, because despite, or probably because of the imperfections, we made it ourselves!
